Handling F & B Controls across India.
Supervision of unit staff, looking after their daily performance regarding inventory.
Preparing weekly reports & Monthly outlet Cost report.
Supervise overall controls & Audit from HO and have a surprise visits to the units on periodic basis.
Supervise regular inspections/audits to ensure that proper procedures are being followed and that all required standards are being met.
Supervise in monitoring requisition of supplies and materials in accordance with inventory management objectives.
Supervise to implement inventory control procedures and proper stock rotation techniques to properly receive, stock, issue and re-stocking of goods and from the storerooms.
Supervise to manage and budgetary controls and provide an explanations of budget variance on a monthly basis.
Supervise to constantly review current operating procedures for expense reduction opportunities.
Continuously identify improvement opportunities in overall operation of the outlet.
Supervise for MIS Reports & Analysis Food & Beverage Reports (Weekly & Monthly) for all the revenue generating outlets.
Supervise the Yield Management For all F&B products.
Supervise all the inventory auditors on periodic basis.
Supervise Menu Pricing, Menu planning & standard recipe, Cost reports - Weekly & Monthly, F&B Budget, Requisition & Purchase order, Purchase Tenders finalization, Vendor development etc.
Controls on Recipe costing and menu pricing for Pan India, further monitoring and reviewing the same. Controls and Review of the Purchase Requisition for proper ordering to avoid any excess stocking in the units.
Co-ordination with the Internal Audit to minimize the Variances and Spoilages on a monthly basis.
Reviewing cases like wastages, spoilages, variances, and inventories of units & thereby implementing measures for controlling the same.
Staff Training Department like Purchase, Stores, Controls, & Audit dept.
Supervise in cost allocations, Provisions and departmental P&L statement on a monthly basis.
